Seasonal Menu Additions Fusing Warmth And Decadence

As winter approaches, the menu at Two Noble has gained some seasonal variations along with new flavours sourced from regional Indonesia and the Philippines. Explore the subtle seafood delicacies of scallop, octopus or kingfish, or the delicious combination of woody black funghi with refreshing cucumber and sesame. Bold, punchy surprises can be found in the chicken liver parfait paired with miso and orange, or the decadent venison tartare, shallot, chilli, wonton puff .

Several new desserts conclude the experience, including a sublime peanut and chocolate parfait inspired by a childhood memory. There is so much to enjoy on our culinary journey through South East Asia - we hope you join us at Two Noble soon!

Notes On Some New Dishes At Two Noble By Head Chef, Mario Tambajong

Octopus Betel Leaf, Gohu, Almond: We have replaced the prawn in our betel leaf dish with octopus, which imparts a more subtle seafood flavour. The dressing is perfect for colder weather.

Appellation Oyster, Sambal Rajang: Sambal Rajang is a Balinese delicacy traditionally served with seafood. It is quite rich and herbaceous, with lemongrass and dried prawns providing warmth, not spice. Australian oysters have a mineral flavour at this time of year, and we serve them warm - almost Kilpatrick style with the top of the oyster meat slightly blistered. The sambal is served at room temperature.

Pipis, Lemongrass, Coconut Curry: This dish features a sauce that is used in my home town, Manado, which is in northern Indonesia. Historically, this sauce was used to serve with sea turtles. Because they are now endangered, the region switched to using clams (or pipis) in this curry. It is a very traditional style curry, and may also be served with chicken.

Chocolate And Peanut Parfait: I was inspired by the memory of Reese’s peanut butter cups, which I loved as a child!

Pavlova, Rhubarb, Mandarin: This dish is both sweet and sour. The sourness of the rhubarb is paired with the mellow citrus of mandarin. The combination works well with pavlova.
